What should replace Walk In Wednesdays?
Due to a few this-and-that variables, we had to discontinue Walk-in First Wednesdays… HOWEVER we’re working on cooking up something new!
We’d love to hear what you might want in a drop-in event~
the goal is to have some hang-out time for all of you in our cozy space, as well as to offer discounted mini-sessions to keep the recession out of your shoulders!
Email us an idea—for a name or a format, and we’ll enter your name in a drawing for a free gift item from the Chakra Khan shop!

Ingredients:
1/2 cup uncooked pearl barley*
4 cups water
2 1/2 cups broth - whatever kind you have
1-2 Tbs. butter
1 medium onion, chopped (about 1 1/2 cups)
2 medium cloves of garlic, minced
1 lb. mushrooms, sliced
2 cups greens (kale or Swiss chard), chopped
1/2 - 1 tsp. salt
3-4 Tbs. soy sauce
3-4 Tbs. dry sherry
2 Tbs. white vinegar
freshly ground black pepper
Procedure
1. Place barley and 1 1/2 cups of the water in a large saucepan or a Dutch oven. Bring to a boil, cover, and simmer until the barley is tender (20-30 minutes).
2. Meanwhile, melt the butter in a skillet. Add the onions and saute for about 5 minutes over medium heat. Add garlic, mushrooms, greens and 1/2 tsp. salt. Cover and cook, stirring occasionally, until everything is very tender - about 10-12 minutes. Stir in soy sauce and sherry.
3. Add the saute with all its liquid to the cooked barley, along with the remaining 5 cups of water. Grind in a generous amount of black pepper and simmer, partially covered, another 20 minutes over very low heat. Taste to correct seasonings - I usually add more soy sauce and sherry at this point.
Yields 6-8 servings
* Packaged barley will have fortified vitamins and minerals sprayed on it, which is good for your health, but may have adverse effects on your soup, as it will cloud the broth and create some sediment. You can remedy this by buying the barley in bulk or rinsing it before cooking.
